The Bread

In my house we call our favorite homemade bread “The Bread” because it is that amazing. It’s so good that my mom, with a gluten allergy, still eats it. So I’ll share the recipe and steps to making it. Just so you know, this recipe only makes one loaf. We made two because we go through it so fast.

For one loaf you will need:

  • 3 cups of flour
  • 1/4 teaspoon of yeast
  • 2-3 teaspoons of salt
  • 1 5/8 cups of room temperature water
  • oatmeal
  • cornmeal
  • a large bowl
  • a cooling rack
  • a 5 quart cast iron pot with lid (we used a 5.5 quart because that’s what we have)

First, mix the ingredients in the bowl. You can mix it all up with a fork or spoon or your hand, I like to use my hand.

Once the ingredients are mixed leave the dough in that bowl and cover it with cling wrap. Let the dough rise for 18 hours in a warm place. We like to turn our oven on a keep warm setting and leave the dough on the stove top.

After waiting those 18 hours clean your counter. You’re going to fold the dough so sprinkle some flour on the counter, and your hands, so it doesn’t stick. The dough only needs to be folded over a few times.

Inside of another bowl, or your cleaned out original bowl, lay down a clean dish towel. Do not use a terry dish cloth, it will not work well. In the towel sprinkle some oatmeal, this will end up being the top of the bread. Plop the dough in the bowl then sprinkle some cornmeal on the top. Fold the rest of the towel up over the dough. Let the dough rise for two more hours.

After an hour and a half of those two hours turn your oven on to 450 degrees and stick the pot and lid in the oven to get hot.

When you reach your two hour rising point pull the pot out of the oven and remove the lid. I suggest setting the pot on a trivet because it could potentially damage your counter.

The next step is a little tricky. Lift the dough out of the bowl by the four corners of the towel. Place your hand under the towel and plop the dough right in to the hot pot. If it hasn’t been perfectly plopped don’t worry about it. It will still be delicious.

Put the lid back on the pot and put your dough in the oven for 25 to 30 minutes, it depends on the size of your pot.

After that time remove your lid and let the bread bake for another 17 to 20 minutes, again, it depends on the size of your pot.

Remove the pot from the oven and set it back on the trivet. VERY carefully take the bread out of the pot and set it on a cooling rack. I suggest wearing oven mitts.

Let your bread cool for as long as you want, then cut and enjoy.

    Honestly, I didn’t know that super awesome button did anything. I just clicked it every once in a while.
    The crust is a little tough, but I like it. You can really taste the oats that are on top. The dough itself is very chewy. And. Well, it’s hard to describe. But it’s delicious, I promise.
